Gluten Free Dairy Free Mini Egg Muffins

For a meat-free protein-packed breakfast or snack, you can’t go wrong with these adorable and delicious Gluten Free Dairy Free Mini Egg Muffins. Make a batch on the weekend, then have a quick-fix breakfast on the go all week!

Ingredients
  • 4 eggs
  • 1 Tablespoon tapioca flour (also called tapioca starch)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup Daiya vegan “cheese” shreds, or other dairy-free “cheese” of choice (if not dairy-free, use an equal amount of real cheese if you prefer)
  • 2 Tablespoons chopped fresh herbs (Use your favorite like cilantro, chives, dill, basil, etc.)
  • 1 – 2 teaspoons Dijon mustard, to taste (optional, but adds great flavor)
  • ⅓ cup finely chopped roasted red pepper (or another veggie chopped fine, like onion, raw red or green pepper, etc.)
  • 12 grape tomatoes, halved, for garnish (or cherry tomato cut into fourths)
