Gluten-free spaghetti is fast, easy and delicious thanks to great gluten-free products. I used Tinkyáda Pasta Joy gluten-free brown rice spaghetti and Muir Glen organic tomato sauce in this recipe but use your favorite gluten-free products- there are many to choose from.

Gluten-Free Buttermilk Pancakes

Homey and comforting, these pancakes are sure to please your family and guests. To make these gluten-free pancakes, you’ll need 1 cup of Carol’s Sorghum Blend.

Ingredients:
  • 1 c. Carol’s Sorghum Blend
  • 2 tbsp. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ tsp. Xanthan gum
  • ½ c. buttermilk
  • 2 tbsp. unsalted butter or buttery spread
  • 1 large egg
  • 1 tsp. pure vanilla extract

Gluten-Free Chicken Nugget Recipe

Gluten-free chicken nuggets are incredibly crispy thanks to gluten-free panko-style breading. These golden, crispy chicken nuggets are delicious dipped in sour cream horseradish sauce and kids love them!

Ingredients
  • 3 skinless, boneless chicken breasts
  • 1/2 cup gluten-free all purpose flour mix (use your favorite mix)
  • 1/2 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1 teaspoon gluten-free Italian herb seasoning blend OR gluten-free garlic powder
  • 1 large egg and 1 tablespoon olive oil, whisked together
  • 1 cup crushed gluten-free rice chex cereal OR gluten-free panko flakes OR crushed gluten-free crackers (see tips)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup olive oil for pan-frying
  • 1/4 cup canola oil for pan-frying

Gluten Free Dairy Free Mini Egg Muffins

For a meat-free protein-packed breakfast or snack, you can’t go wrong with these adorable and delicious Gluten Free Dairy Free Mini Egg Muffins. Make a batch on the weekend, then have a quick-fix breakfast on the go all week!

Ingredients
  • 4 eggs
  • 1 Tablespoon tapioca flour (also called tapioca starch)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup Daiya vegan “cheese” shreds, or other dairy-free “cheese” of choice (if not dairy-free, use an equal amount of real cheese if you prefer)
  • 2 Tablespoons chopped fresh herbs (Use your favorite like cilantro, chives, dill, basil, etc.)
  • 1 – 2 teaspoons Dijon mustard, to taste (optional, but adds great flavor)
  • ⅓ cup finely chopped roasted red pepper (or another veggie chopped fine, like onion, raw red or green pepper, etc.)
  • 12 grape tomatoes, halved, for garnish (or cherry tomato cut into fourths)

Gluten-Free Fish Stick Recipe

Cold water, wild fish is a healthy, safe option when you’re shopping for fish. If you can find it at your local grocery, buy frozen, wild caught Pacific cod for this recipe. It’s usually easy to find. I have used quite a few brands of frozen cod to make this recipe and find the best quality frozen cod is available at Costco. At least that’s the case where I shop. Be sure to thoroughly thaw the frozen cod and blot it with paper towels until the fish is dry to the touch. This recipe is a great way to prepare fish to make a batch of delicious fish tacos.

Ingredients
  • 2   large — approximately 7 oz white fish fillets —  preferably sustainable wild caught Pacific cod
  • 1/4 cup gluten-free sweet rice flour, more if needed
  • 1/4 cup gluten-free corn flour, more if needed (cornmeal can be substituted and will make the coating crunchier)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon Old Bay Seasoning (optional)
  • 1/8 teaspoon black pepper, or to taste
  • Frying oil – preferably organic peanut oil or your favorite high heat fry oil

Chicken Fajita Quesadillas Recipe

Fajita seasoning makes this recipe unique. It’s rare for enchiladas to be this flavorful, which is why this is one of my favorite Mexican meals to make. They are not only tasty, but healthy, too

Gluten-Free Classic Tuna Casserole Recipe

his classic gluten-free tuna casserole recipe is based on a recipe by John Mitzewich, our award-winning Guide to American Food. It’s wonderful comfort food for those of us on gluten-free diets!

Ingredients
  • 8 ounces gluten-free pasta (I used Sam Mills brand 100% corn gluten-free rigatoni shells)
  • 1 cup frozen sweet peas
  • 3 tablespoons butter
  • 1/2 cup finely diced sweet yellow onion
  • 1/2 cup finely diced red bell pepper
  • 4 tablespoons gluten-free sweet rice flour
  • 1 3/4 cups milk or half and half
  • 1 1/2 cups canned gluten-free cream of mushroom soup OR homemade gluten-free cream of mushroom soup
  • 1 large (12-ounce) can tuna packed in water, well drained, broken into small pieces
  • 2 cups freshly shredded cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper, or to taste
  • 1 cup gluten-free bread crumbs OR 1/2 – 3/4 cup gluten-free cracker crumbs
